Thai tea leaves are a specialized, strongly brewed blend of Ceylon or Assam black tea mixed with spices like star anise, cardamom, and tamarind seed Authentic Thai iced tea is a simple process, typically requiring black tea leaves, water, and condensed or evaporated milk. Steep the loose tea leaves in boiling water for 3 to 5 minutes to create a strong concentrate. A fine sieve or “tea sock” is often necessary to strain the fine leaves. Sweeten the hot tea with sugar or condensed milk. Serve by pouring the sweetened tea over a tall glass of ice. Brewing
Water 200-212°F. Steep 4-5 minutes. Bold and full-bodied; boiling water works well.
- Use about 1 level teaspoon of loose tea per 6-8 oz. of water unless the product label says otherwise.
- For blended teas, follow the temperature of the most delicate true-tea base (green/white before black).
