Black TeaAssam CTC
This fast-steeping black tea from the organic Dinjoye Gardens in the Assam region of India is known around the world for its full-bodied flavor that combines well with milk. This grade is found in a host of English and Irish morning tea blends. Think of it as comfort food! CTC stands for Cut-Tear-Curl, a process invented by the English when they established many of the gardens in India and Sri Lanka. The tea leaves are put through a Rotorvane machine, which eviscerates the leaves. This makes a finished tea that is concentrated into tiny pellets. This ensures a fast steep and bold cup of tea filled with tasty tannins that love to bind with milk. Black TeaColonial Bohea
Bohea tea, (pronounced “Boo-hee” – Ukers 510), was by far the largest tea import during colonial times. Sometimes called Bohea Souchong or Lapsang Bohea, the blend originated in China with trade to the British and Dutch East India Companies. It was so popular that the word bohea became the slang term for tea. The blend varied wildly, consisting of broken orange pekoe, pekoe, and souchong dumped in a pile and then sifted, typically the scrap tea of lower quality leaves, but was considered high quality by the colonists. What a fascinating cup of tea this is! This ungraded single-estate tea from Kenya’s Lelsa Estate is mountain grown. While most black teas go through a grading process at the end of production in order to separate the leaves by size, this tea comes straight from the mouth of the tea dryer. Big leaves, little leaves, and all the bits in between can be seen here. It makes for an interesting cup of tea that will tantalize your palate as different notes appear on your tongue. For us Kentuckians, it’s like drinking bourbon straight from the barrel of one of our nearby distilleries. It has an exceptionally deep profile!
